Glorious woodsy sandalwood spice and deep pine scented red cherries at 19 years on...a sweet curing tobacco leaf and a silty cedar tannin that goes swimmingly with slow rendered duck breast, morels crisped up in duck fat and complete wilted ramps -first the bulbs the the greens all in the same single cast iron pan. All it took was heat, time, salt, and thyme...
