Dry, elegant and clean. Mineral tang and salty. Clear light yellow and citrus. Perfect with modern Greek plates.

Keep this one until it is ready to drink. After a few years the minerality and acidity and fruit all come into balance. Such a clean finish: we grilled a couple sea bass with garden oregano, and this was a perfect match.
