apple blossom silk and green apple apparent at the start, but this benefits from a night open in the fridge, and with some of the chill off it, the floral and fruit notes get really amplified….the apple is gone but some green-yellow skin notes remain, asian pear maybe?, and the silk gets creamier, with a broad chablis-esque rinse of acid at the back. spent a year with its dead yeast sludge apparently…..to the delight of the consumer.
