Stony-steely yesterday, a little patience reveals a lady of considerable refinement, with lemon softness coming to the fore. The truncated and almost wholly muted boa became expansive with pansy and peonies, the minerality gaining strata, and pairing with a range of flavors. Semillon-esque but with a 10 foot backbone. Glad I waited.

Mild lemon, fresh florals and big crisp apple, with a more of pear as it warmed, on the nose. Clean and light on the tongue, finish more round and leaves a creamier aftertaste. Mild salinity. Beat paired with food. Fish, oysters, but able to stand with spiced tomato dishes.

Text book Chablis with chalk and crushed oyster shells on the nose. A tiny bit of gun powder and lemon too
A very well balanced palate with a strong acid drive and a nice lemon note all along, and almost tropical fruits notes too. A long citrusy finish close it up in a very fresh fashion. It was served with oysters, shrimps, see snails and smoked trout. Perfect pairing
