Great nose with juicy red forest fruits and some faint herbs. It is deep and complex on the palate with more red fruit, earthy notes and a herbal note with some sharpness, almost like mint, but not really. Some white pepper in there as well. Pretty fruity finish.

Sep 18th, 2021Nose has smoked plum, crushed blackberry, warm tar, moist leather, blueberry jelly, wet nutmeg (?), water drenched garden soil, galvanized steel, unseasoned beef jerky, cedar box and dried blackberry.
Palate has velvety sweet blackberry, light vanilla, tart plum blackberry jelly, wet cigar, granite paste with aggressive tannins.
What an amazing, young Hermitage! Sweet and rich black fruits monopolize the palate, drying tannins indicate the youthfulness of this bottle, expect it be drinking great in another 10 years! Enjoy 2030+ We adore this bottle tonight, but understand what it will evolve to...
Opened 24H prior for slow oxidation, 5H decant, much more time appreciated.
Paired to slowly braised, local (Kinderhook Farm, Valatie, NY) lamb shanks and Parmesan polenta, a match made in heaven.

Unreal nose. I love love love Colombier. Huge raspberry, blackberry, cassis, leather, herbs, smoke, mesquite bbq, granite and mineral. Enormously complex nose but just a baby. Palate is rich and ripe with stunning purity and density. This is a great Hermitage. Massive concentration and refinement with unreal freshness and such a super clean finish. Amazing balance and purity. What a big boy. Velvet texture is to die for. Big tannins and serious structure but all in such divine balance. This is grand. This is epic. This is genius. It’s so big and so refined and so so elegant. Wow.
