Les Pensées de Pallus Chinon Cabernet Franc
Oh zippy. It is less a hedonist and more and artist. An artist keen on committing to a movement whilst retaining its agency. It has a bit of a funky nose so do the swirl decant dance. Then you’ll have fun earth and every color of pepper and tannins that speak up then stand down yet linger respectfully in the background a like a chaperon who keeps just enough distance. Prob my fave Chinon yet.

A little unbalanced acid and tannin wise. True #cabfranc aromas and better and less expensive than it’s bigger brother which gets lost in a fight with St. Emilion somewhere in between Loire and Oakland. #loirelovlies

1 person found it helpfulDec 20th, 2018We decanted for 2 hours prior to enjoying. This Chinon is biodynamically created with a long maceration period, no fining or filtration. Aged 12 months in barrels and an additional 6 months in concrete. The results are a light bodied, gorgeous expression of Cabernet Franc with grippy tannins, earthy aromas and tasting notes of blueberries, raspberries, bell pepper and a hint of smoke. Paired with a slow roasted Bloody Mary beef brisket.

Nose is complex with notes of stewed strawberry and rhubarb, cherry preserves, fresh mint, lemongrass, coriander, ginger, and delicate leather notes.
