This lovely Rose has the heft (taste and body) to pair very nicely with an Italian cheese course of soft raw milk and sheep cheeses (no blues) and grilled salmon. Summer al fresco dining fun!

This wine was significantly better on its second day. Apparently it needs a very long time to breathe to lose some harsh notes. I am never going to like Tavel Rosé, and while this one is better than most, it’s not my choice. Too acidic when opened, but much better once it breathes. The nose is nice, and the palette is strawberry on the second day. For those who like this style of Rosé, which is more of a food wine like red wine than an accompaniment to cheese or aperitif, this may be a good choice.
