La Côte Sta. Rita Hills Pinot Noir

I always have two wines to pair with an entree. Like variety. This has a beautiful herbal quality in it that pairs nicely as a follow up wine to my pork chop.

Here is the recipe. Try it sometime.

4-6 thick cut bone-in pork chops

- 1 cup hoisin sauce
- 1 1/2 tablespoons of sugar
- 1 1/2 tablespoons of Tamari soy sauce
- 1 1/2 tablespoons sherry vinegar
- 1 1/2 tablespoons of rice vinegar
- 2 scallions chopped
- 1 teaspoon Tabasco Sauce
- 1 1/2 teaspoons of Lee Kim Kee brand chili sauce
-1 1/2 teaspoons of ginger (I triple this)
- 1 1/2 teaspoons of garlic (again.
I double this)
- 3/4 cup of cilantro (no stems)
- 1 tablespoon of sesame oil

Whole cluster Burgundy or California!? 😅😁

The flagship wine from this fantastic domestic Domaine. It’s so Burgundian with its intense whole cluster aromatics, focus and refinement. Very enjoyable.

Cherry, dried tomatoes, raspberry, plum, dried mushrooms, soil. Better the second day without decanting. This one has some legs.

Pretty, very light. Translucent. Aromatic. Showed very well beside a nice Burgundy. 12.5 % alc. I’m envious.

Elegant but with plenty of intensity. Complex already with notes of black raspberry, wild strawberries, spices and silky tannins.

Sweet candies red cherry and graham cracker. M+ acid, m- body, m soft silky tannins and a long finish. Pure class!

Doesn't have the elegance of the Sandhi La Cote, but has all the nuance. Very complex nose and palate. Bigger framed than the Sandhi. @June's All Day, Austin TX

Quite tertiary now with prominent mushrooms and truffles. Intense flavors yet only 12% ABV.
