Full bodied with Asian pear, peach skins, and almonds drizzled with honey. Lots of minerality on the finish that seems to go on for days. Lush but far from cloying. Has more time ahead of it.

An elegant coconut of a wine. Round, vanilla tropics. Buttered lobster or snapper with Béchamel pairing. A very original wine.

We’re having a Thai style tofu and sautéed vegetables paired with a 2020 Languedoc blend of 30% Roussanne, 30% Vermentino, 20% Grenache Blanc, 20% Marsanne.

This wine is bone dry, aromatic, medium alcohol (13% ABV), medium acidity, medium body and mouthfeel, with aromas and flavors of beeswax, orange blossom, melon, tart apricot, grapefruit pith, blanched almonds, and wet slate.

This wine offers precision and balance. It’s a lovely accompaniment to the meal, holding up, but not competing, and adding lift to the sensory experience.

Cheers to Domaine d’Aupilhac and Winemaker Sylvain Fadat!

A very complex and delicious white of Rousanne, Marsanne, Grenache Blanc, Vermentino and Clairette, works best with food, like some Roger Vergé fish dishes🇫🇷
