Pop and pour yesterday, in the fridge overnight. Notes from today. On the nose:.chalk, seashell, lemon, a hint of iodine, and more mineral notes buoyed by background soft fruit. On the palate: good acid, but comes off slightly flat on the midpalate; more stone and lemon oil, without too much overt fruit. I would love this if it was a little more vibrant on the mid. Nevertheless, nice stony, iodine finish. Wish I had some sea urchin to pair with this!
