De Dolle Brouwers
Stille Nacht Belgian Strong Ale
We were inspired by @Ira Schwartz’s post to pull one of these out. Cap reads 2010. Immediate hiss and scent of burnt caramel. Carbonation is à point. Palate is fresh—figs, brown sugar, honey, dry finish. A great winter warmer. Fun to age these.

Feb 17th, 2021I remember loving this years ago. Aged this bottle for 8 years. 2012 bottle cap date. Nose with dried fruits, some citrus, bread. Palate is just stunning. Viscous with raisins, dates, caramel, toasted/burnt walnuts, and an underlying acidity that really keeps this in balance. Outstanding. One of the best aged beers I’ve ever had.
