Napa Valley Cabernet Sauvignon

Very nice

Decanted for two hours. It opened up beautifully. Blackberry jam, cassis, lavender, and black currants. I love Dakota Shy wines. This is their basic Cab, but it is a sophisticated, complex, and overall fabulous wine.

Soft tannins and open knit. Decanted for an hour or so but not really necessary.

This is singing beautifully.

I am a big fan of the wines the guys at Dakota Shy are making. This is their generic Napa Cabernet. It is still very much a baby but is showing signs of being a bold but graceful wine that can stand toe-to-toe with just about any other Cabernet from Napa. Great tastes of blueberries, raspberries, mocha, anise, and baking spices on the palate. It had only been decanted maybe 30 minutes when I first tasted it and it magically transformed over the next hour or so. This wine is well constructed today but will only get better over the next decade. I just ordered a case yesterday. This winery is going to be a cult winery in the very near future in my opinion.

Big and dense. Definitely needs more time.
