We loved our trip to Tassie last year. In fact Mr Spittoon and I have even flirted with the idea of moving down there at some point.

While staying in Launceston we visited the Clover Hill cellar door and it’s absolutely beautiful! These guys really focus on making extraordinary sparkling wines and they are doing a great job 🍾

The Clover Hill team kindly sent us this Non-Vintage Tasmanian Cuvée of theirs to try (thank you!!). Which we enjoyed with friends recently.

This bubbles is made up from 3 different vintages (years) to make their signature NV style. It is made in the traditional style (like champagne) and spends 2 years on yeast lees. It was awarded 92 points in the 2020 Halliday Wine Companion - not bad for a $34 bottle 🥂

It is a white gold colour in the glass with notes of brioche, apples and grapefruit dominating the nose for me. In the mouth it’s elegant and silkily smooth with those apples coming through alongside yummy mandarin citrus. Delish!

During the week we celebrated our piccolo turning 2 weeks old! I wonder how many week milestones we can get away with celebrating with a bottle of bubbles? 😂

We were lucky enough to received this sample Clover Hill NV Tasmanian Cuvée recently (thank you!) and it was the perfect tipple to celebrate with!

This bubbles retails for $34 and is made from 3 main vintages to create this NV house style bubbles. It undergoes a bit of malolactic fermentation to soften the acidity and is aged on lees for at least 2 years prior to release.

It’s a pale lemon shade in the glass and in our dim lighting it looked to have a slight peach tinge to it. On the nose it’s super fresh with citrus, sea salt and pears coming through for me. While in the mouth it’s vivacious and citrus driven with lemon and lime bubbles that tickle the palate. It’s elegant and lean with a lick of honeyed apples on the finish. Delicious 😋
