Another Wednesday Wine Committee lunch, this time hosted by my buddy @Will Adams ! As always, all wines are tasted blind.

Killer! Drinking so nice right now. Almost everyone (including myself) guessed Sauternes. Richness is there but not overly sweet. Orange marmalade, honeysuckle, dried apricot and a toasted caramel note. Wonderful.

Rather indulgently I chose the fois gras as my first course during my recent meal at The Modern. The preparation is one the sweeter side, with this Sauternes as the suggested pairing. Rich, complex, tropical and sustaining, the bright golden viscous wine added a much appreciated nuance to the already spellbinding dish.
