Vintage 2010 | Cabernet Franc, eleven years old, 24 months barrel aging. I like this type of wine. Must be tamed. So stubborn. And full of character. I gave it 4 hours aeration. Minerality is dominant in the smell. Barnyard. The vibrant acidity in taste that can be so expressive in CF. | Paired with tenderloin and Chinese mushrooms. And edammer cheese.
