Fresh oak. Residual sugars give a lovely dry caramel apple with warm spices. Not sweet. Balanced, thoughtful, interesting. As it warms it gets heavier. We're drinking with smoked pork and poultry, and it holds up. Also works with pecan pie. Would pair well with a grilled steak if you don't enjoy reds.
