Unctuous. Straight away the bouquet is reminiscent of, and I’m not kidding, state college dive bar. Slight fennel. Apricot preserves. Everything is subtle in the bouquet, so you really have to take the time.

Plenty of bubbles. Bubbles are overpowering almost like beer. Champagne like overall quality. Semi-dry.

Chalky, you can almost taste the sediment, but kind of in a good way, similar to Nigori Sake. It’s meant to be there.

Licorice finish. Idiosyncratic and interesting.

A little too overwhelming and raw. Dried apricots.
