So when it's hot in Miami - and it always is - and I'm craving something refreshing - and I always am - this is it right here. Completely earth driven, and bottled so quickly after fermentation that they forgot to knock all the CO2 out. Refreshing acidity, and mineral driven backbone for days.

A little prickle on the tongue to go with lemon and stone fruit. Nice bitter almond snap on the finish. Refreshing and uncomplicated.

Rounded and ever so slightly bubbly. Grilled pears and freshly picked asparagus. Green Apple and a squeeze of lemon. Delicious.
