Aug 26th, 2021Fendant (local name for Chasselas) from Switzerland. Steely, flinty and bright, lemon and alpine herbal/floral character, underripe almond, finishes with a pleasing roundness.

So rarely do I have the opportunity to taste Swiss wine, which is imported in such minuscule quantities to America’s shores. To my pleasure, Park Tavern has one on the list. This bottle from Cave Caloz is made from Switzerland’s signature grape Chasselas, locally known as Fendant. Juicy with a flamboyant lemon blossom aroma, the wine is round with orchard flavor, yet soft and airy. Somewhat simple, but pure and charming.

Notes if vanilla, leafy greens and cooked green apples on the nose, with hints of dried mango and a little bit of creme brûlée deep in the fragrance. Leggy, with a medium body and a pale yellow/green color it’s my first experience with Fendant and it’s impressive! The palate is silky and slightly vegetal, with notes of cinnamon apple sauce, maybe fresh leeks even, with a long dry finish with hints of creamy ricotta that pairs beautifully with a sausage, peppers, potato, onion and egg scramble! It’s not a seafood white really, it’s more fit for a veggies, eggs and chicken Alfredo wine.
