Bruno Paillard's 2004 Brut shows it's pedigree. Less yeast, slower second fermentation and longer en-triage make for a complicated but flavor driven Champagne , one of the best I have had this year.

Love the labels from these older Paillard wines. This was at or just a touch past its peak. So voluptuous. Decadent and malo-inflected. True wine for the Belle Époque
