This one is all about the palate, as the aromatics are subdued. Intense umami-driven flavors, both nutty and mushroomy. The acid is moderate but integrated masterfully.

Tasty tropical fruits. I'm really not sure how these Japanese folks do this with polished rice but I keep finding the more intensely polished rice sake to be exploding with tropicality. This is no exception. Decadent, zippy, and light at the same time. Easy on its own. No need for food. I love that.

Very nice balance of sweet and savory. Drinking pretty cold, I hope to get more aromatics. Right now: pear, white pepper, lemon, those little flower shaped Japanese cookies that are light as air.
