2021/5-6. This starts off pretty funky, with some old tsukemono notes. Over a few days, though, it calms down, revealing some nice Chenin fruit and wool, though the ciders side is always there.

Bringing it again this year! The flavor is so dialed in with lemon, oyster shells, brioche, a bit of stone fruit thrown in, and just the slightest bit of spiced pear. Killer!

Uhhhmazing! Nose of lemon zest, dew on grass and clovers. Palate is so complex. Lemons, fresh bread, yet a good herbal flavor. Such an awesome food wine. I’m guessing this could pair with 90% of all meals. Perfect for ginger chicken stir fry for us. QPR for sparkling is insane for this wine.

I was surprised by the bubbles! I didn't realize this was a sparkling but it's really incredible. Best drank at just cooler than room temperature. Too cold and it's harsh, but let it sit for a bit and it really opens up. Minerality, very gentle sweetness, very well balanced. Awesome wine!
