It's been a long week of work for both my wife and me, only thing needed to help us ease our way into the weekend, is Champagne.

Nose is lightly briney, fresh sage and peppercorn and cold yellow apple.
Palate has chalky red fruits, abundant red & yellow cherry, great acid and even better mineral texture.
I usually decant this bottle to alleviate some of the bubbles (they're crazy), but opted to not today. We're sitting by the chimenea this afternoon, so I'm just letting the bottle air out in the ice bucket.

I've found the Brice NV bottles all need a decant, yes decant Champagne, seriously. These bubbles are over the top, and only an extensive airing will bring you full enjoyment. The vintage bottles are good to go from the bottle, more restrained effervescence there. This was decanted for about 60m, but I did have the decanter in the refrigerator, I still have respect for service temperature.

Very good showing and just so fine with sappy red fruits and a nose of lovely yeasty and brioche scents. Very young and lovely freshness. So easy to go down. But some good sap and structure.

Lovely nose. So clean. Creamy, floral, yeasty. Palate is so elegant pure and clean but with terrific structure and grip. So juicy and wonderful mouthfeel. Dissipating finish. So lovely. Perfect before 10:00 AM Champagne.

Mar 12th, 2016Very elegant and fruity Pinot nose. So delicate. These are very very elegant. Elegant and delineated with nice sap and distinctly mineral finish. Dissipates nice on the palate. These are for the connoisseur. Malo is blocked and only Pinot Noir and Chardonnay are used so that is why it is so elegant.
