Beautiful vinosity to this holiday style, very pretty

Saison brewed for the holidays. This is Belgium in a bottle. So good. Big frothy white head. Sour bread starter. Banana. Wheat in the fields.

Bazinga. Incredible!

Bubbles pre-gaming. (No sabers.)

Honey, lemon zest, black pepper, pickling spice, wet clay, earth. Blast on the palate of body and flavor and really long earthy finish.

Classic saison nose - this is the yeast by product I constantly try to emulate in my beers. Touch of funk, ripples of spiced coriander, just too over-carbonated. Don't get me wrong, Overstand how this needs to be Primed via champ yeast in the bottles to survive export, it's just sometimes the suds overtake my palette. Still a damn fine ale.
