Smooth fine bubbles, nice texture.
Not the large bubbles of previous vintages. Great flavor profile, the three fruits really balance each other. Crisp yet soft and fruitful. Glad to see its not just for club members now. Great cider.

With cider brined pork chop, roast cabbage and roast fingerlings. Brining solution reduced into sauce. Delish!!

Looking to balance aromas, acidity, tannin and earthiness from apples, pears, quince. Earthy, pithy, quince and apple skin aromas dominate. Tart and balanced. Doesn't pair particularly well with membrillo but brilliant with cheese.
