She is red-fruit forward, she has brioche touches and sea salt nuances on the nose. The palate is that sort of balance there isn’t a proper word for but gosh it’s there. Finishes slightly toasty with a zip of lemon and a squeeze of cranberry.

Champagne has gotten expensive lately. This is no different. But, it is my go to N/V Rosé. Seems I’m still willing to pay the large increase for it.

Tis the season for garden tomatoes. So great with Burrata topped with olive oil & Tondo balsamic, (find it, the best), basil, served on olive oil brushed, broiled crostini’s made from Simple Sourdough made by Companion Bakery. From 375ml.

No complaints here - it was an apt night cap. Lovely energy to rejuvenate the palate, all without being too austere. Generous fruit core of apples, strawberries, citrus, and hints of preserved plums. Excellent with some Wagyu cold cuts.

Sipping Fine Wine

Brilliant pink salmon color, fine bubbles, firm mousse, elegant aromas of fresh red fruits, with gentle citrus scents. Brut Rosé, a Romantic champagne, blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as red wine. On the palate graceful fruit flavors of fresh raspberries and ripe cherries integrated with slight spice and hints of chalky mineral, vivid acidity on the well balanced long finish ending with biscuit notes. Nice!

It’s 1/2 bottle n/v Billecart evening.

This is a more appropriate color of rose for the Rosé color of this champagne.

My go to n/v Rosé Champange for a number of reasons…quality & 1/2 bottle availability are right up there.

Blood orange, black cherries, Rainer cherries, lean strawberries, pomegranate juice, hints of raw rhubarb, grainy, grippy, sharp chalkiness, crunchy volcanics, limestone, sea fossils, baguette crust, deep white spice, orange lilies, peach roses, excellent, lively acidity with a rich, well balanced smart finish that starts clean, ripe fruits falling onto perfect minerality.
