Carricante- only white grape or Etna. Sparkling made traditional style
Noblesse- golden straw color.
Paired with carrot cream tart. Citrus and brioche on nose. On palate, minerals, brioche and citrus and toasted almonds. High acidity. Paired well with sweet carrot. Dry. Very little sweetness.

Great winemaking. Methode champenoise that maintains the true character of the carricante grape. Balanced, with complexity, without being tiring. Less dosage would make it better - yet still definitely brut.
