Dec 31st, 2019Macabeu and xarello. Refreshing, elegant and balanced. Would have guessed traditional method due to the tiny persistent bubble and the yeasty complexity. On the higher end for ancestral at $28 but worth every penny. Aperitif before lasagna!

Lemon, yeasty, very dry. A bit simple at first but opens with air and as it warms 👌
