Assaf Winery
Rujum 91 Cabernet Sauvignon
I thought this was the best of the lineup at the tasting room, but upon further review back at home, itβs still too sweet and oaky for me. Sadly, this was one of my favorite Israeli producers.

Mar 3rd, 2018spent a night at a cabin next to the winery. great room, food and lots of wine.
white wine (nice chenin) and this red waited for me in the room.
drank the white (see review not long ago) and took home this Cabernet sauvignon.
100% Cabernet sauvignon
18 months π«π· & πΊπΈ oak treatment.
14% ABV
ruby red with firm legs π
mint, eucalyptus, capsicum, ripe cranberry and blackberry and π with noted oak spices, π and caramel. a rich π
medium + body.
medium acidity.
firm but light tannins
almost off dry.
same as nose π
medium pleasent π―
came out of the bottle closed in terms of πand π. after an hour opened up gradually and was ready in two hours.
well made, nothing too exciting.
not sure about vfm. staying at the winery was expensive but worth it.
had roma style pizza with it. half was white π with portobello and blue cheese. the other half was black olives and onion with hints of chilli πΆοΈ.
they got along ok, because of the semi sweetness and the low tannins, i assume.

Dark ruby in color, and cloudy with a reddish rim.
Strong nose of cherries, blueberries, wood, earth, vanilla, licorice, cloves, herbs, spices, dark chocolates and peppercorn.
Medium bodied with medium acidity and long legs.
Dry on the palate with blueberries, plums, currants, oak, vanilla, cloves, tobacco, coffee, earth, bell pepper, vegetables and black pepper.
Nice length on the finish with firm tannins and tart cranberries.
A nice, yet simple, Cabernet from Israel. Not completely balanced with a gentle mouthfeel. A little lighter than I expected, but I liked it a lot.
Good right out of the bottle with big tannins, and better after 90 minutes of airtime, when those calm down.
A good sipping wine and will be better in a year or two.
100% Cabernet Sauvignon grapes from the Golan Heights Appellation. Aged for 17 months in French and American Oak barrels.
14% alcohol by volume.
$30.
