Very interesting. Smells a bit like sherry. Dry dry dry. Mineral, clean, light fruit. Goes well with tacos, veg, even tart apple and figs. Refreshing!

PX nose, raisiny, melon, candied fruit. Dry palate, oily, lavender, oxidative, honeyed. A bit of a curio— dry Montilla PX 8 months sous voile. Fabulous with sockeye.

Jul 17th, 2021Pedro Ximenez from Montilla-Marillen vinified into a crisp, fresh dry with 8m of flor aging.
Quite soft & round in the nose with some apple, toasted almonds, a whiff of orange peel and some of the PX praline sweetness.
On the palate this is linear & precise with tangy acidity, a touch of salinity and some nuttiness to the apple fruit.
This is bone dry, crisp & highly refreshing yet not as sharp or complex as a typical Fino.
Great with a piece of aged cheese, some olives or a bit of charcuterie.
