have been dying to dig into this for the longest time. tucked into with baguette and mussels in escabeche and this pairing was an absolute dream. gorgeously integrated tropical fruit and searing acidity but the brine and minerality took center stage. this was drained clean within about 15 minutes of opening.

The nose made me think this would be a bit richer than the palate shows. Some woody spice & lemon curd aromatics are hard to resist. Drinking it is a different animal. Tension, mineralogy & freshness are the story here. Enchanting and delicious.
