Vaillons Chablis 1er Cru Chardonnay

Loving Dauvissat’s 18’s. Definitely nailed the vintage. The Vaillons was a bit more reduced than the Forest, but every bit as pure and focused. Great.

Rich, showing lemon zest with a perfumed nose of saline, white flower, chalk & wet stone

This was showing well with notes of lemon, apple, mineral, saline & white flower

Nose: elegant density. Lemon flower. White flowers. Complex. As this opens mushrooms.

Palate: some gras. Mineral. Some green apple.
