Nose has Clementine peel, cold apricot, orange oil, warm strawberries, sea salt and sliced peaches.
Palate has peach, dried orange, dried sage, dry sliced almonds, minor saline notes and orange zest. Long finish, continually evolving, actually just tossed this intro a decanter as I think it will benefit.
Fun wine, can easily understand it's prowess and popularity, it's in the zone for us as well.
Paired with sugar/salt rubbed Cod cooked in the sous vide bath, then topped with sauteed shallots/capers, aside parmesan/panko spring peas. So yum!

Clos Cibonne is the best rosé. Change my mind. Classic, utterly delicious combination of stonefruit, ripe citrus, profound notes of sea salt, herbs de Provence, and lavender. Of course refreshing, but its textural complexity and depth make for an almost umami-like experience on the palate. Served with whole roasted branzino, garden vegetables, and Tuscan white beans on night 1 and homemade foccacia pizzas on night 2. Both meals in the running for food/wine pairing(s) of the year (so far).

I saw someone use the word “Umami” to describe this wine. Agreed. That’s a fine descriptor. Deeply flavored, yet light and big on ripe citrus, herbs and sea breeze. Damn this one is a gem and a standard bearer of what Provence produces. Get some!

The best serious value rose’. Period. Beautiful, always and every year. Vivacious, citrusy, curvy, savory. Orange spice and herbs de Provence.

A great wine in every vintage. Soulful & unique. Clean, fresh melon gives way to herbal accented summer berries. Structured, yet nimble. Palate weight is effortless here. The record is the debut from Kamasi Washington, appropriately titled The Epic. Much like Cibonne, this is bold and courageous. He decided to release triple LP’s for his first two albums, and there isn’t a note of filler on there. Equal parts Coltrane, Tapscott & Pharoah Sanders. He’s a legend already. Great things.
