Amazing w/ the Allen Brothers A-5 wagyu.

This is another Bordeaux producer that makes wines for the ages. I’ve waited & waited on 2000, this shows some readiness. Yet, will go another 20 plus years.

Tonight this is well balanced earth & candied fruit. In 10 years, this is candied fruit & florals.

Still medium plus tannins. Blackberries, black raspberries, black plum with ample skin, juicy dark cherries, poached strawberries, raspberries, dry limestone grains with powder, dark, forest floor with dry leaves, some dry herbaceousiness-bay leaf, mint, dark spice, clove, nutmeg, some cinnamon, hints of vanillin, mid berry cola, sandalwood to cedar shavings, used leather, pipe tobacco, anise, some mocha, sun tea, dark, red, purple flowers with a touch of blue, excellent acidity and a well knitted structure, balanced, nicely tensioned with a ripe, elegant finish that lasts two-minutes.

Calon-Segur is notorious for being a producer for the ages. This 2000 is no different. Although, just starting to blossom.

Classic great Bordeaux vintage.

Excellent with the ribcap. 6oz’s of waygu equals an hour plus bit & sip.

Sipping Fine Wine

An outstanding wine, something special, was lucky enough to get a taste. A blend of 60% Cab Sauvignon, 30% Merlot, and 10% Cab Franc, Rich dark color. Aromas of berries and spice wafting in my glass. Big fruit flavors blackberry and cherry, well integrated with gentle spice and fine acidity. Full body with tannins that still hold up well just have a subtle edge. Lingering finish ending with tobacco and oak notes. Drink this beauty in its prime. Tasting Sample.

18yrs young! Still drinking very well. Fruit has softened and given away to more secondary flavors but its still in its peak drinking window.

Brought the bottle up from out of the cellar and pulled the cork about an hour before the first pour. Bin-stained label. Cork was in perfect condition. After pouring the first glass, it was clear that we were in for a treat as we could smell the bouquet from across the table, drawing me in closer. Notes of cassis, dried apricots(?!), tobacco, damp forest floor, well-oiled ball glove, fresh asphalt and a touch of green bell pepper. So many wonderful layers! The color was deep garnet and hardly showing any signs of age. Some fine sediment was present. On the palate it was cassis, tobacco and a touch of cocoa. Finish lasts for 20-30 seconds. Beautiful body. Tannin is still a factor though it's not a chore to get past. Considering the adequate acid, considerable structure, and the fact that this tasted nowhere near 17 years old, I would have to say that the 2000 vintage will last for decades to come. This was an outstanding bottle. Drink now or Hold.

Very refined, has a nice long even finish. Tannins still present but not overpowering, has a undertone of leather, currants and dried herbs. Very pleasant.
