Selfridges - old oak barrel no flavor from barrel allow microoxidation empower it to biscuity broiche like / rich flavor / chardonay + pinot noir. Soak not long enough for color to come thru but get flavor / secondary fermentation with cock / 7 years fermantation for vintage / not too dry / oaky / pair well with sth greasy eg fish and chips, nuggets — 2 years ago
