2017 base (25% reserve wines), degorged January 2020. 2020/12/26-27 with Christmas leftovers, hard boiled eggs with cheese sauce, ebi and hotate fry. Deep gold, starts with a little apple cider but opens to spiced apple turnovers and custard - gives a sense richness while being totally dry. — 24 days ago
Believe this is the old label that was used until the early 2000s (please correct me if I’m wrong as I can’t find anything definitive online). But a well made NV with a bit of age is always tons of fun! Creamy honey notes layered with brioche toast. Not a ton of acidity but enough to keep it from becoming pure syrup. — a month ago

Nothing like my previous btls, and truly splendid...holy btl variation! As always, overfilled and showing seepage and a completely soaked cork. On the nose: noble reduction, lemon oil, fresh herbs, so aromatically compelling. On the palate: very good acidity, loads of wet stone, lime, lime oil, excellent density. Perhaps slightly clipped on the wet stone, and black pepper finish, but peu de chose. Very good. — 15 days ago
