Katoukichibee Shouten

Born "Dreams Come True" Junmai Daiginjo Sake

Born “Dreams Come True” is a Junmai Daiginjo from Kato Kichibee Shoten in Fukui Prefecture. It’s aged for five years at –5 °C (some sources mention –8 °C). This is supposed to be one of the top Born sakes and it would be interesting to try with a couple others side by side. It’s a liter bottle and when it got opened it was on the cold side. As it warmed and opened up you can see why people call it flamboyant. It becomes a big, powerful sake with big flavors and a long finish. Heavy weight on the palate but very smooth and as they say velvety. It was nice but I wouldn’t go out of my way for it - not sure why other than maybe how it started out which was a bit sharp, angular and lean. Need to pull these earlier. — 10 months ago

Tatsuriki Jingu Junmai Daiginjo

Tatsuriki Jingu Junmai Daiginjo This was an excellent recommendation and was served in a wine glass as well as a “normal” sale glass. I preferred the normal glass. Less nose but more on the tongue. The markup was rational but it’s steep. — 2 years ago

Domaine Clos des Rochers

Grand Premier Cru Moselle Luxembourgeoise Auxerrois Blanc 2017

An aperitif wine to engage the palate and build the appetite for dinner on this wet covid day inside. Even Jake won’t go out. This wine isn’t a Ferrari - more like a spiffy Honda with metallic paint and a nice stereo system. Nice wine. — 6 years ago

Tatsuriki Nihon No Sakura Kinpaku Junmai Daiginjo

This was sharper on the palate, more alcohol and I think it’s silly when they include gold flakes in the drink. It’s supposed to be somehow restorative; I don’t even think that’s based in pseudo-science; it’s just a fad/marketing thing. In any case, it imparts no flavor which this same had a lot of, but it didn’t match the others which were higher quality imho. — a year ago

DW-Old Barossa Valley Syrah

2013 Sami-Odi Syrah DW-OLD
Thought I’d open something from my favorite Australian producer, @fraser_mckinley, in honor of the start of the Formula 1 Season in Melbourne. (Nice start for my man Max Verstappen and the new Red Bull partnership with Honda). My first and only bottle of the 2013, decanted for 3 hours. 14.4% alcohol. It appears a deep, dark, black hole in the Zalto stem. Nose of dark berries, clove-and-cinnamon and dried fruits, with some forest floor and floral notes in the background. On the palate, rich dark fruits with a cedary tannin. Wonderful acidity. Full-bodied, fresh, rich and complex. Lengthy finish. My recollection is that Fraser told me that 2013 was a difficult year with the entire first fruit being destroyed by frost, and then there was a second set. Always amazes me that these challenging years always seem to produce the most memorable vintages. I’m a big fan of Fraser’s work.

Tatsuriki Oyster's Friend Tokubetsu Junmai

This was all part of our Sake Day 2025 experience. We only tasted 60ish sakes out of an estimated 450, so a small fraction of what was available. While I attempted to rinse the glass with water and stay hydrated it’s difficult to fairly rate in this environment and I use it solely as a time to try a wide variety and interact with the brands. Ok. Would not search out — 9 months ago

Tatsuriki Kome No Sasayaki Daiginjo Sake

From Hyogo prefecture. Honda Shoten Tatsuriki Daigingyo. Ripe melon and golden pear on the nose.
This nihon-shu has a viscous quality. Yellow plum, ripe honeydew melon, apricot with a spicy cinnamon finish. We had duck soba with local Matsutake mushrooms and green onions charred in duck fat with this sake.

Château Rieussec

Carmes de Rieussec Sauternes Sémillon-Sauvignon Blanc Blend 2017

Ok I am a fan of rieussec especially the 2015 vintage; this one doesn’t stand up anywhere close to the 2015. This 2017 vintage wine is “interesting” as it delivers gewurtz like rose petals mixed in with pineapple and kumquat notes. Clashing with chocolate molten cake (my bad for trying to pair). If you have to try one, try 2015! Unless you can get hold of 2001. Cheers and merry Christmas from Bahia Honda — 7 years ago

Haruka

This seasonal sake is called “Jumai Ginjo Namzake” from the Harushika Sake Brewery in Nara, Japan. It is insanely smooth sake that has a subtle cherry fragrance and aftertaste without it being too sweet. It’s one of the best sake’s I’ve tasted! — 7 years ago
