Only about 2 years on wood. This has a bit of pear in it as well which shows in a delicate perfume of yellow skined fruits. This should be very interesting to riff with as a base for white spirit cocktails. — 2 years ago
Somehow only subtly of apple. The base material is more than 80% bitter and bittersweet apples. — 2 years ago
Perfect amount of sweetness, fresh, slight funk — 5 years ago

This finished in Cognac barrels. It offers a much drier expression focused on wood characteristics. Savory and firm this would be good with some pate or foie. — 2 years ago
Aged for 10 years in barrel.
This has well integrated components of the wood and is showing the deep harmonious notes of autumn; decaying leaf mould, slightly browning apple skin/pulp, clean hummus. It is all tertiary sweetness. — 2 years ago

Vintage 2022 | Tasted blind next to a Marsanne white. Interesting: the Chardonnay was tempting, while the Marsanne was strict. Pear, mild acidity, lovely structure, good effort! — 12 days ago
