At the Dom Perignon dinner last Friday night. This was the 2005 in a luminous bottle which presents wonderfully in a darkened room - somewhat of a marketing gimmick, with a little battery in the punt of the bottle, but I’m sure it has the desired effect of selling more bottles. Didn’t take as many notes as I should have as the previous wonderful Champagne started to kick in! Salmon/Pink in colour - a wonderfully fragrant Pinot nose - rich on the palate with more phenolics than the 2006 to follow. This is more the keeper. A good red burgundy with bubbles. — 3 years ago
The final wine at the Dom Perignon dinner last Friday night except for a little glass of Hennessy Cognac where I forgot to make notes. The same lovely Salmon/Pink as the 2005. This was more immediately loveable than the 2005 with delicious red fruits - warm and fleshy - sunshine in a glass. An absolute crowd pleaser but shorter term than the 2005. — 3 years ago
The starter at the Dom Perignon dinner last Friday night. The standard Moët et Chandon from wrapped magnum (will find the correct term) - protecting the champagne from light. Opened alongside a 2002 Piper Rare (winner), 2006 Piper Rare, 2006 Taittinger Comtes, 2007 Billecart Nicolas Francois, and 2012 Dom Perignon.
As you can tell, this was opened in great company and showed very well. Profile wise, this was in between the Piper Rare (rich and layered but bright) and the Taittinger Comtes (a bit surprisingly the brightest and lightest of the group). Not as honeyed aromatically as the two Piper Rare offerings, but loads of white peach, grilled lemon, honey and orange roasted cashews and sea salt. This showed a kiss more depth than its 2007 sibling, with lemon scone, limestone and racy acidity. It certainly drinks younger than it is. Classically Billecart in its “down the middle” style. Never too much/little of anything.
I wish I had another bottle to open in 5-7yrs, as this is aging glacially and beautifully. — 2 years ago
This superstar 2012 vintage just doesn’t seem to miss. Especially not when paired with the elegance of Bollinger.
A gorgeous rose copper color in the glass. Plenty of fine bubbles that seem to just go on and on. The approachability of these outstanding 12’s is immediate. Wild strawberries and herbs shine on the nose. Red currant, raspberries, and stewed plums. Some exquisite spice notes along with white flowers. Tangerines and watermelons play a part.
The vitality and sheer energy of this is amazing. 67% Pinot Noir from Aÿ and Verzenay. 33% Chardonnay from Oiry and Le Mesnil sur Oger with 5% still red wine from Bollinger’s legendary Côte aux Enfants vineyard. Terrific youthful tension and balance. Zippy acidity with 8 g/l of sugar. Disgorged in August of 2019 and already showing some maturity.
Pure romance on the tongue. Silky smooth and elegant with fresh red berries and more spice on the palate. Saffron and honey with oak complimenting. The Lehmann Jamesse Grand Blanc provided more floral notes, while the Riedel Dom Perignon showed more ripe fruit and minerality. Both wonderful. Yes this will obviously develop over time and become so much more special but you deserve this now. So do I. Enjoy.

Light gold in color.
Nice crisp nose with limes and brioche.
Light to medium in body with medium plus acidity and small bubbles.
Dry on the palate with nice complexity.
Showing citrus, yeast, minerals, bread, green apples, herbs, earth, lemon juice and white pepper.
Long finish, tasty and elegant.
This 16 year old still feels very young, and will continue to age nicely in the next 10 to 15 years. Rich and well balanced.
I love this vintage of Dom Perignon. Complex and interesting. I've had this vintage it a few times before, and it is very consistent.
Good by itself as a sipping wine, or with food. Good stuff.
