This wine is within the same geographic area as Jurançon but a different appellation. The evolution after opening was startling. It began with blackberry and a hint of mint, chocolate, and smoke upon opening. Twenty minutes later it was like walking down a pleasant perfume isle. Lovely French sparkling! Very similar to Champagne with some nutty/bread notes but the Chenin Blanc really comes through on the finish with some honeydew, and white rose. — 8 months ago
