La couleur brillante présente des reflets orangés. Le nez fait penser aux amandes grillées, puis aux olives noires.
En bouche, le vin rappelle l’effet sirupeux de la mélasse. Cuir, café, musclé. Encore très intéressant même en 2019.

Note : Louis Bovard makes bio-dynamic culture and has introduced in the Lavaux new grape varieties such as Chenin Blanc. The name of Salix comes from the Latin word meaning the willow, with which one braided the branches to make baskets of vintage. A golden yellow straw robe with a nose of citrus, pineapple and mineral. Once in the mouth, the explosion of flavor with a nice acidity and a taste of citrus and apple. The final is excellent, it remains in the mouth and perfectly accompanied a fish.

Louis Bovard fait de la culture bio-dynamique et a introduit dans le Lavaux des nouveaux cépages comme ce Chenin Blanc. Le nom de Salix vient du terme latin signifiant le saule, avec lequel on tressait les branches pour faire des paniers de vendange. Une robe dorée jaune paille avec un nez d’agrumes, ananas et minéral. Une fois en bouche, l’explosion de saveur avec une belle acidité et un goût d’agrumes et de pomme. Le final est excellent, il reste bien en bouche et accompagné parfaitement un poisson.

This '81 was amazing, and showed many facets through the evening.
The Préfert was really wonderful, the first time drinking Isabel's wines, delicious.

I fondly remember this wine. Had a couple of bottles in my dad’s cellar in the late 80’s. Some field mice got in and gnawed the top of the capsules off only two bottles in the cellar: both of the ‘81 Beaucastels! They knew. (They left the corks intact and the bottles were stellar.)

This wine blend is medium red with ruby highlights. The aromas hints are of rose and cherry. A cranberry-ish tinged finish is finely enhanced with smooth tannins. Dark red/black cherry and blue fruit. Tarragon/liquorice floral character. Cracked black pepper. Whiff of Dr. Pepper. Smokey And smoked meatiness!! Ample but beautifully supple tannins. Complexity on the nose and palate. Medium length finish. Paired this with a bacon burger with cheese and caramelized onions. I want to live in my wine glass. Drank at Walnut Street Café in Philadelphia. — 8 years ago
