Tastes like strolling along a river bank on a sunny fall day with a slight chill in the air.
Unripe green apple, white grapefruit, white peach, white nectarine, lemon and tangerine oil, lime blossom... and SO MUCH minerality. This is textbook wet stone, cool slate, and sea-breeze salinity. Lean and precise, with laser-cut acidity; not austere, but it might be if it didn’t have such an unexpectedly lush mouthfeel.
If I didn’t know this was Chenin, I might blind it as an Aligoté or a Romorantin. I’d love to try this again in 3 years or so! — a month ago
On nose slight peach, honey, stone. Very light pink color. Refreshing on paler. Balanced, low acidity and sugar. Nice chilled. Not every day you find a white Cab Sauv. Overall nice wine! — 4 months ago

Winery Notes: "Citrus blossom aromatics, with lemon oil, pineapple, lemongrass, minerality, and viscosity on palate. The Albariño comes from a beautiful vineyard site in Calaveras County, owned and managed by Matthew Rorick and family. The fruit was harvested pre-dawn in mid August at 22.5 deg brix., and promptly hauled "down the hill" to the winery. Whole cluster pressed and fermented in neutral Hungarian oak barrels, there were no additions made to the wine aside from a moderate amount of sulfur dioxide to prevent oxidation. Aged 11 months on lees, and bottled on August 24th, 2016. The vines were planted in 2003 on a mixture of schist, quartz, and volcanic soils." — 8 months ago

5th in the tasting. First of the peat. Really nicely done. Not overly peaty. FYI supposedly the 12 is as good at a better price. Craziest thing I heard? Try the Nikka 21 with sushi. Not sure how we got here and on this topic but I think it was due to the peat/no peat differences. This is one that Start said he always has for company. He also called out the Macallan 25 and Reflection (not a house whiskey obviously but there for special occasions). I noted I need to come over more often!
