I absolutely love Tsarine Rosé.. this was a Truffle Burrata with heirloom tomatoes and Basil. It was a perfect pairing.. the truffle and creamy buffalo mozz fell in well with the toast and mousse of the champagne, while the acidity and saltiness from the tomatoes and balsamic fell right in with the strawberry and citrus zest undertones. Wow! This was fantastic! I will say up front, although I thoroughly enjoyed this on New Year's Eve, I think that in 3 or 4 years this will be drinking in its sweet spot. Fresh wild cherries, and rose petals on the nose, cinnamon undertones, creme brulee, walnuts, and a dollop of citrus. The bubbles were very refined and the champagne was quite vibrant and effervescent. The "dollop of citrus" is what I think will turn into a "touch" after a few more years in the cellar. If you ever want a very characterful Rosé, give this one a try. — 6 years ago

An extra brut. Bright rose gold with fine bubbles and white mousse. High percentage of the Pinots results in a voluptuous nose of Royal Anne cherry and toasted white bread. Medium bodied palate echoes the palate with flinty baking apple mid palate. High acidity, of course. Slightly lingering finish. Approachable extra bruts (and brut natures) are the one upside to climate change. Tsarine’s black grape-heavy cuvée puts Orium right up there in the pack. A perfect match for Sushi, oysters, or that classic Champagne brunch dish, scrambled eggs with caviar. Drink it when you buy it. — 6 months ago
