An extra brut. Bright rose gold with fine bubbles and white mousse. High percentage of the Pinots results in a voluptuous nose of Royal Anne cherry and toasted white bread. Medium bodied palate echoes the palate with flinty baking apple mid palate. High acidity, of course. Slightly lingering finish. Approachable extra bruts (and brut natures) are the one upside to climate change. Tsarine’s black grape-heavy cuvée puts Orium right up there in the pack. Nose of yeast, Carmel, and green apple, reminiscent of a vintage champagne. Bright, green apple, brioche, and mineral. Well balanced with minerality on the finish.
