My last bottle from an original dozen - drinking at its peak. Mid Lemon in colour - aromas of Honey, Beeswax, Toast, Lemon and loads of minerality. Waxy texture on the palate. Good tasters even professionals say this wine has been matured with Oak but it only ever sees Stainless Steel. It puts on palate weight and complexity with time - an intriguing drink. Great match with Oysters and Prawns.

Pale lemon in colour - the colour of a 3 year old white wine rather than a 16 year old one. On initial opening lemon nuances with bees wax and wet hay. More honeyed notes after 40 mins make this worth the wait. Delicate palate with fruit and acid toning down lacking a little mid palate fruit but this is not a style for everyone. Top quality Hunter Valley Semillons like this live for a very long time. 10.4% Alc.
