Pairing to homemade Tex Mex Enchiladas, I was hoping for a tight acidic profile and citrus throughout. This delivers. Lemon, grapefruit, lemon peel, and tropical fruit, served on a clean stone platter. I was pleasantly surprised by some roundness on the palette, which I always hope for in new world Sauv Blanc. Air brought out a touch of butterscotch on the nose too.
