Fino Muy Seco Palomino Fino Jerez-Xérès Sherry

Pre Elsa storm checklist: Fino, check. At the mercy of Total Wine here on the Gulf Coast, but it could be worse: this is all rounded and apples in brine.

Clear medium lemon; clean, medium plus intensity aldehydic notes of bruised yellow apple, yellow pear, salted marcona almonds, yeasty dough, briny green olive, preserved lemon, tarragon, blossom; dry, medium acid, low alcohol, medium body, pronounced intensity flavors of bruised yellow apple, salted roasted nuts, olive tapenade, oyster shell, medium finish; good due to balanced alcohol and acid, shorter length, moderate intensity and concentration

This sherry has a golden-yellow tint and a forceful nose. That wonderful resinous sherry smell is there in spades, along with walnuts and anise. The sip offers similar wonders, with a completely savory approach. It's as dry as a bone, provided the bone was lying in the desert sun for a while. There's not a lick of sweetness, so it's not Grandma’s sherry. The chalky vineyard soil seems to speak through what these Palomino Fino grapes have wrought. There are notes of hazelnut, lemon and the all-important yeast layer - flor - that sits atop the wine in the barrel for five years. The acidity is decent, but not too forceful, and afterward, the finish lingers with anise lasting the longest. Wow, is all.

Solid benchmark.

Marcona almonds in the nose, medium body with citrus zest bitter, briny salinity, manzanilla olives, pleasant acidity in the finish.

I had neither a positive or negative first experience with sherry. Ground walnuts/almonds, heavy anise at the beginning but it tapered down.

Took me a while to appreciate sherry but I found the key is food - little bit of walnut nutttiness bruised apple fruitiness kinda of a saltiness
