Apple cidery at first, but with 30 minutes of air this opened up to become a briny, yeasty treat. Totally dry with searing acidity. This really needed food to show its best.

A bit yeasty and blue cheese on the nose. Almost a little apple cider vinegar. Interaction with the age, would like to try it young. Nasty in a good way

I'm pretty sure I can find a cider with a similar profile for far cheaper.
