
50/50 blend of Pinot Blanc and Pinot Meunier. Yellow tinged with pink, excellent clarity. Floral, honeyed nose with a hint of mint but mostly dry in mouth, appley (malic-citric crisp), calcium-mineral finish. Austere wine and low alcohol (9.5% alc/vol). Would pair great with seafood, but did not go that well with black bean and ginger sockeye salmon (but no wine goes with black bean sauce, right? A malty German lager, maybe... ) But an hour later, creaminess emerges in the finish, along with moderate skin astringency. Nice complexity, if you are willing to wait for it
