Acid is there, but expected more complexity from past experiences with the grape. When opened, reeked of oak. Tasted, decanted, drank over the course of four hours, never showed much more than what it offered initially. Orange blossom, almond extract, oak influence.

Probably should have held onto this one a while, but it's just too good to wait. Perfect with tonight's cheese course. Pollen, honey, preserved citrus, and wet stones.

Could there be a better pork belly wine? With some cabbage sautéed in pork fat, it's actually necessary...
