Having grown up in the West Country of England, I got to know what an unpasteurised bone dry apple cider tastes like. Turns out this 2-day on skins, natural white wine from Sete, tastes like a Somerset special.

This wine was super unique boarding on an orange wine. Great structure and color. Maybe a weird tasting note but almost like a really well made lemony chicken stock.
